ABSTRACT:
Organosulfur compounds are a diverse class of organic molecules characterized by the presence of sulfur atoms bonded to carbon, widely distributed in natural sources such as garlic, broccoli, mustard, and mushrooms. These compounds, including allicin, diallyl sulfides, sulforaphane, and others, exhibit significant biological and pharmacological activities. They play crucial roles in human health due to their antioxidant, antiviral, antibacterial, antifungal, anti-inflammatory, anticancer, antidiabetic, antihypertensive, and cardioprotective properties. Their mechanisms of action involve modulation of cellular signaling pathways, inhibition of pathogenic enzymes, enhancement of immune responses, and regulation of lipid and glucose metabolism. Additionally, organosulfur compounds contribute to detoxification processes and protection against oxidative stress. Deficiency of these compounds may lead to impaired antioxidant defense, metabolic disorders, weakened immunity, enzyme dysfunction, and various physiological disturbances including cardiovascular, neurological, and connective tissue-related problems. Overall, organosulfur compounds are vital bioactive molecules with significant therapeutic potential in maintaining health and preventing disease.
